Bucket List Items Accomplished
- Eat Hagelslag (Dutch chocolate sprinkles on buttered toast)
- Roast chestnuts on an open fire. There are a few edible chestnut trees in my neighbourhood. They dropped a lot of their nuts during a windstorm this week. I went and gathered a nice big bag of them and greatly enjoyed a lovely autumn day roasting them at Goldstream Provincial Park. The main picnic and firepit area by the parking lot was full of families, but I remembered a lone firepit by the nature house that isn’t accessible by car. I loaded up my bags with firewood, my frying pan, and other supplies and enjoyed the short hike to my own private firepit. I followed this guide from Food52 to roast the chestnuts. They are a pain to peel, but it was a bit meditative, and what a treat.

- My 30 day exercise challenge continues. The week started very slowly since I was still getting over my cold and feeling low energy.

Meal Prep and New Recipes Tried
I am continuing my quest to cook 30 recipes from 30 countries in 30 days. I made some more breakfast food this week. We are up to day 11 now. I made an extra breakfast that I had for lunch this week.
- Cuscuz Nordestino (Brazilian corn couscous) from Sabor Brasil with reference from Easy and Delish’s Cuscuz de Milho Recipe. I made the cuscuz according to the first recipe, but looked at the second for the coconut milk and shredded coconut topping idea. This was so filling and sustaining until a late lunch.
- Popara (Croatian bread porridge) from the Balkan Hostess. I used goat cheese in this buttery, warm, mess of a delicious breakfast. I was a little bit suspicious of how this would turn out, but the custardy bread was so good.
- Hrringur Morgunmatur (Icelandic oatmeal with skyr) from Yummy Iceland, with reference from Mayuri Jikoni’s Hafragrautur (oatmeal) recipe. I love oatmeal for breakfast, and love trying all different variations, flavours, and toppings. This one was nice and filling because of the added protein from the skyr, which gave it a lovely creaminess. Raisins and brown sugar were great nostalgic complements to the dish.
- Nigerian Indomie Noodles with Egg and Vegetables from Malika Halima with reference from All Nigerian Foods’ Indomie Recipes Post.
- Hagelslag (Dutch chocolate sprinkles on buttered toast). I used De Ruijter chocolate sprinkles. They were delicious.
- Bika Ambon Panggang (Indonesian honeycomb cake) from What to Cook Today. This was so springy and had a very interesting flavour with the kaffir lime leaves, lemongrass, and turmeric.
- Changua (Columbian Egg and Milk Soup) from My Columbian Recipes. The cilantro and green onion made the milk into a surprisingly flavourful broth. Pieces of bread soaked in the soup were delicious as well.
- Karjalanpiirakka/Karelian Pies (Finnish Rice Porridge Hand Pies) from Saimaa Life. I served these with the traditional egg butter that was recommended in the recipe. A slightly salty, satisfying snack.
I made these other recipes this week.
- Autumn Sweet Potato and Carrot Soup from Once Upon a Chef. The name is the truth. This tasted list Autumn in a bowl. I will definitely be making this one again. I made it in the slow cooker by just tossing everything except the apple and honey in the slow cooker for four hours on high.
- Fermented Zucchini Pickles from Fermented Food Lab. I’m going to be focusing on eating a variety of probiotic foods over the next couple of weeks, which I will talk about next week.
- Garlic Dill Carrot Sticks from Cultures for Health.
- Chickpea Fries from Hey Nutrition Lady. Another great use for besan (chickpea flour).
- Roasted Tandoori Cauliflower from the Endless Meal.
