2020: Week 39

September 21, 2020 – September 27, 2020

Bucket List Items Accomplished

  • Try pole dancing
  • Bake a galette
  • Try reflexology. I didn’t really know what to expect from this, but it was a very relaxing and enjoyable experience. The practicioner applied very firm pressure at times to my feet and lower legs, but my muscles felt much more relaxed after.
  • Make japchae

Things I Enjoyed this Week

  • My 30 day exercise challenge continues. I am trying out as many different forms of exercise as I can. I unfortunately pulled a muscle early in the week, but I still managed some exercise each day.
    1. Aerial silks. This was my favourite of the circus classes I have taken at Island Circus Space.
    2. Pole dancing. I took my class through Electra Productions. The instructor was amazing, and I had a lot of fun with this intro class. We learned three spins and some other techniques that we could weave into a mini routine.
    3. Yoga. Thankfully this was a very gentle class.
    4. Chair Cardio YouTube video from Trish Blackwell
    5. Hatha Yoga
    6. Volunteered all day doing renovations. I tore up vinyl flooring and moved mulch with a shovel and wheelbarrow.
    7. Walk

  • I want to continue posting the new words I find in the wild from books or podcasts.
    1. Axis mundi – cosmic axis or world pillar, a symbol representing where the heavens meet the earth. It is sometimes represented as a tree, vine, or mountain

  • I watched no Oscar Best Picture Winners.

  • I taught myself no new constellations this week.

Meal Prep and New Recipes Tried

Tis the season for pumpkin everything. I love using warming and comforting spices like cinnamon, nutmeg, and clove when the weather starts getting cooler.

  • I used the challah I made last week to make challah French toast. I just beat an egg with a splash of non-dairy milk, some cinnamon and nutmeg, and a bit of sweetener. I soaked each slice in the mixture until it looked nicely saturated. Then I fried it in a pan and served it topped with fresh blackberries. Simple, warm, and perfect.
  • For my first ever galette, I baked Budget Bytes’ Blueberry, Lemon, Cream Cheese Galette. It was straightforward to make and the crust turned out flakey. The blueberries provided most of the sweetness, and the combination of cream cheese and lemon complemented them beautifully.
  • I bought a giant can of pureed pumpkin. I used a bunch of the puree and the leftover frozen beans from last week to make Skinnytaste’s Hearty Vegetarian Pumpkin Chili.
  • I made a batch of Healthy Pumpkin Spice Latte Cinnamon Rolls from Amy’s Healthy Baking for breakfasts this week. I also made actual Pumpkin Spice Lattes from another one of her recipes.
  • I followed Maangchi’s recipe for Japchae. I also took a look at My Korean Kitchen’s Japchae recipe. I used so many mushrooms. I used fresh shiitake, portobello, and brown mushrooms. It took quite a while to cut and stirfry everything individually, but the results were so delicious.
