Bucket List Items Accomplished

  • Make dumplings. I made Japanese oyaki. Half were stuffed with kuri squash and half were eggplant with miso. They were fried and then steamed in the pan.

Things I Enjoyed this Week

  • I want to continue posting the new words I find in the wild from books or podcasts.
    1. Avulsed – pulled or torn away
    2. Propolis – a substance made up of resin, saliva, and beeswax mixed by honeybees and used to fill crevices in honeycombs

  • I watched no Oscar Best Picture Winners.

  • I taught myself no new constellations this week.

  • I renewed my first aid this week, which ate up most of my weekend.

Meal Prep and New Recipes Tried

I am eating plant based for a week. I started on Saturday, and all of the recipes I have made this week are vegan. For breakfasts I made simple stovetop oatmeal with banana and coconut.

  • I made Oyaki from JustOneCookbook’s recipe. I subbed kuri squash instead of kabocha since my mother gave me a lovely fresh one from her garden. I also used Italian eggplant instead of Japanese. My roommate bought and forgot two of them, and they were languishing in the fridge.
  • I used this recipe from the Seasoned Vegetable for One Pot Japanese Pumpkin Curry and it turned out beautifully. I used some more of the kuri squash in this. I use Japanese curry roux blocks all the time and love the convenience. My favourite kind is Torokeru by S&B.
  • I also combined the recipe for this Kale and Butternut Squash Salad from SkinnyTaste with the Autumn Salad Plate recipe from the Moosewood Restaurant Favorites Cookbook (recipe reprinted here). I wanted to keep it plant based this week so I did not use any cheese. I added pumpkin seeds and cranberries instead of almonds and I used the pear thyme dressing from the Moosewood recipe. I also added cannellini beans for some protein.

  • It’s was a day early, but I wanted to do my summary for August. I crossed 16 things off of my bucket list. That makes three months in a row of really solid progress on the list.

  • In the month of August I read and listened to four books. I listened to audiobooks for two of them and read two. Here’s what I finished reading this month.
