Bucket List Items Accomplished
- Make baked fish
- Make a Victoria sponge. I have been watching the Great British Baking Show for the first time and was inspired.
- Make rice pudding
- Own a fountain pen with green ink. I’ve always wanted one since Hogwarts entrance letters and correspondence from Dumbledore come on parchment with green ink. I just got a basic pen to write letters and to try some calligraphy. I would like to get a more ornate one some day.
- Try pilates. I followed this Pilates Flow: Pilates Workout for Butt, Thighs and Core video from FitnessBlender on YouTube. It was a bit tough for me but manageable because it was short. I would like to try more pilates to help increase my core strength.
Things I Enjoyed this Week
- My total count of random acts of kindness is now at 30, and I am calling it done. This was a hard challenge for me, but it was rewarding to think more about how I can give back.
- Gave away some home goods for free on the curb
- Fed the ducks
- Made no complaints for a day and tried to have all my interactions be positive
- I want to continue posting the new words I find in the wild from books or podcasts.
- Requite – Repay or make return. Opposite of unrequite, as is unrequited love.
- I watched no Oscar Best Picture Winners.
- I taught myself no new constellations this week.
- There was some dense fog this week. It made for eerie views of the breakwater. The distant fog horns of boats hidden in the murk also added to atmosphere.
Meal Prep and New Recipes Tried
- I used a super simple recipe from Snack-Girl for Baked Salmon from frozen fillets with lots of lemon and dill. I ate this during the week with colourful salads with spinach, roasted butternut squash, pickles, pickled beets, tomatoes, and avjar.
- I used the Genoise Sponge Cake from Natasha’s Kitchen to make a simple Victoria sponge cake with some homemade strawberry jam I was gifted.
- I made Cashew Milk Rice Pudding from Indulge Your Inner Foodie. The tapioca flour helped it thicken nicely, but it was a little muddy looking from the colour of the cashew milk. It tasted great though.
- BudgetBytes recipe for Summer Sweet Corn Salad produced a lovely, sturdy salad for me to keep in the fridge for lunches this week. It helped me use up a good bit of an enormous zucchini I received. I omitted the avocado since I didn’t see any good ones at the store.
- Zucchini Rellenos from SkinnyTaste were a perfect use for my giant zucchini. The filling was flavourful and satisfying as a main dish.
- I finally got around to making this Edamame Potage Soup from Pickled Plum. I had a bunch of frozen edamame beans in my freezer and had been meaning to use this recipe for ages.
Updates
- I started going to yoga classes again since the YMCA gym has reopened with new social distancing measures. I have missed it, and it is lovely to be able to go back.























I love that you’re just getting into the Great British Bake Off – the Victoria sponge looks delicious! I also didn’t know ‘requite’ was a word. It reminded me of that quote from 10 Things I Hate About You – “I know you can be overwhelmed, and you can be underwhelmed, but can you ever just be whelmed?” “I think you can in Europe”

Thank you. It was a delicious light sponge. I have been absolutely devouring the show. I’ve made it through six seasons in the last couple of weeks!
