Things I Enjoyed this Week

I have been thinking about this quote that I came across a lot this week. It was my intent to move to Japan next month to be with my partner and begin building a life there. Being stuck here without any idea of a timeline amid the pandemic has made life feel Sisyphean in many ways. I will continue to try and imagine myself happy, even in this present uncertainty.
- My total count of random acts of kindness is now at 24.

- Donate books
- Send a loved one a postcard
- Buy local stuff and eat from local restaurants all day
- I want to continue posting the new words I find in the wild from books or podcasts.
- Phlebitis – inflammation of a vein
- I watched no Oscar Best Picture Winners.
- I taught myself no new constellations this week.
Meal Prep and New Recipes Tried
- I made Green Chile Enchilada Soup from Once a Month Meals. I ommited the cream cheese and meant to add a dollop of Greek yogurt to each serving, but it’s plenty flavourful and thick without it.
- I also made Vietnamese Street Pizza (Banh Trang Nuong) following a YouTube video from b.delicioustory. It was just a rice paper wrapper that you heat up in a pan, fry an egg on, and spread extra ingredients on. I just did sriracha and green onion. It was more of a delicious, crispy omelette.
