2020: Week 31

It was a pretty quiet week catching up at work, so not much to report.

Things I Enjoyed this Week

  • My total count of random acts of kindness is still at 20. I will focus on this more this coming week.

  • I want to continue posting the new words I find in the wild from books or podcasts.
    1. Imbroglios – a painfully embarassing situation or misunderstanding

  • I watched no Oscar Best Picture Winners.

  • I taught myself no new constellations this week.

Meal Prep and New Recipes Tried

  • I made this delicious miso salmon from JustOneCookbook. It was cooked quickly under the broiler. I have been big into green salads loaded with varied toppings this week including this salmon. The tiny and cute cucamelons were grown by my Mom.
  • I made a smoked tofu, vegetable, and vermicelli stir fry. I used this chicken and broccoli stir fry recipe from Skinnytaste as a base for the sauce.
  • I made bibimbap using Cook with Tini’s recipe primarily. I also referenced Maangchi’s bibimbap recipe. I subbed the bean sprout portion of the recipe for this spicy bean sprout salad from JustOneCookbook. The zucchini, carrots, onion, and green onion used in this recipe were from my Mom’s garden.
  • I made fresh mint tea using this recipe from the Spruce Eats. After chilling it, I also mixed it with soda water, lime, cucumber, and more muddled mint.

Updates

  • I am stretching everyday and following this 10 minute video from TrainLikeaBallerina for How to Do the Splits.
  • I crossed 15 things off of my bucket list in July. That makes two months in a row of really solid progress on the list.
    1. Go on a double decker bus tour

    5. Read a book from a free little library
    6. Make ratatouille
    7. Learn to identify more fungi
    8. Buy something from an ice cream truck again
    9. Stay at a bed & breakfast

    12. Stay in a cabin
    13. Fly a kite again
    14. Make colcannon
    15. Make hot buttered rum
  • In the month of July I read and listened to seven books. I listened to audiobooks for two of them and read five. Here’s what I finished reading this month.

    • Hunger: A Memoir of (My) Body
    • Sunstone (comic)

    1. Aw, thank you. Likewise! Your baking adventures lately have been such a pleasure to read about. Bibimbap was actually pretty easy since the vegetables cook quickly. I just did them one after the other in the same pan. It was such a good way to eat a lot of different vegetables.
