2020: Week 2

Things I Enjoyed this Week

  • I went storm watching at Sheringham Lighthouse. The winds were very strong and it was a king tide, so the waves and mist were incredible.

Meal Prep and New Recipes Tried

Here’s what I made over the weekend for the upcoming week.

  • Southwest Chicken Skillet was so easy and fast. Such a flavourful and colourful way to get some servings of vegetables.
  • Cornbread Muffins (Dairy free). These baked up beautifully. They are a little dry on their own, but they toast nicely and are delicious with blackberry jelly.
  • Chicken Soup in the slowcooker. Wanted to use up the meat off some chicken bones I had in my freezer. The flavour is hearty and comforting.
  • Japanese Sweet Potato Rice in the rice cooker. I made this with half brown rice and half wild rice blend. The sweetness imparted by the sweet potato was delightful. I have been pouring the chicken soup over this to great effect.
  • Overnight White Bread. I want to keep trying with bread making. This loaf has a lot of promise. It’s flavourful and has a gorgeous crust, but my crumb was a bit dense and chewy and the loaf was a little flat. I still have so much to learn. It makes delicious toast though.

Updates

  • I’m participating in an Uber Frugal Month with the Frugalwoods. I did ok with discretional spending this week except I bought Monster Hunter Iceborne on Steam. My grocery and bill spending is well in hand and low.
  • I’m still half way through 30 Days of Yoga with Adrienne and haven’t made any progress. I have been sick all week and didn’t want to push through with too much exercise.
